Ingredients

Marination

  1. Chicken - 500 gms
  2. Curd - 1 cup
  3. Ginger garlic paste - 2 tbsp
  4. Lemon juice - 2 tsp
  5. Chilli powder - 1/2 tsp
  6. Turmeric powder - 1/2 tsp
  7. Coriander - 1 tsp
  8. Garam Masala - 1/2 tsp
  9. Salt

Chicken Masala

  1. Onion - 4 medium
  2. Green chilli - 10
  3. Ginger garlic paste - 2 tbsp
  4. Tomatoes - 3
  5. Garam Masala - 1 1/2 tsp
  6. Salt
  7. Oil

Ghee rice

  1. Basmati rice - 3 cups
  2. Water - 6 cups
  3. Biriyani masala - a pinch
  4. Onion - 1
  5. Ghee - 2 tbsp
  6. Salt
  7. Oil

Dhum

  1. Warm milk - 2 tsp
  2. Garam masala - 1 tsp

Preparation

  1. Wash and clean chicken.
  2. Wash and soak rice for 10 mts.
  3. Marinate the chicken in the marinating mixture for 1 hr.
  4. Heat oil in a frying pan and shallow fry the marinated chicken and keep aside.
  5. Add 1 more tbsp of oil to the same frying pan. Add onion, chillies, ginger garlic paste, salt and sauté for a while.
  6. Add garam masala and sauté well. Now add the fried chicken pieces and mix it well with the gravy.
  7. Cover the lid and let it cook for a few minutes in low heat.
  8. Take off from the stove and set aside till ghee rice is ready.
  9. Heat a wide thick bottom pan. Add ghee into it. Add the sliced onions and sauté till they become golden brown.
  10. Now in the same oil add the biriyani masala and rice and sauté for 10 mts.
  11. Add water and close the lid. Make sure rice don't stick at the bottom of the pan.
  12. Cover and cook the rice well.
  13. Make layers - sprinkle a little milk, garam masala and fried onions.
